Kourabiedes II

These Kourabiedes are traditional Greek cookies that are often served at weddings and holiday celebrations. They are made with ground almonds, butter, sugar, and egg whites, and they have a delicate almond flavor. These cookies are usually shaped into crescents or balls, and they are dipped in confectioners’ sugar.

Ingredients

  • -2 cups unsalted butter, softened
  • -1 cup confectioners’ sugar
  • -1 teaspoon almond extract
  • -6 cups all-purpose flour

Instructions

1. Preheat oven to 350 degrees F (180 degrees C) and cream together butter, confectioners’ sugar, and almond extract.

2. Add flour in steps, kneading with hands after each addition until the dough is pliable.

3. Shape into crescents and bake for 20 minutes or until light brown. While still warm, roll in more confectioner’s sugar.
