Mediterranean Chicken Kabobs With Yogurt Sauce

Ingredients

  • 1 pound boneless, skinless chicken breast or thighs, cut into 1-inch pieces
  • 1/2 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large yellow bell pepper, cut into 1-inch pieces
  • 1 large onion, cut into 1-inch pieces
  • 1 zucchini, cut into 1-inch slices
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (optional)

Instructions

Preheat your grill to medium-high heat. Thread chicken, red bell pepper, yellow bell pepper, onion, zucchini, and cherry tomatoes onto metal or wooden skewers, leaving a little space between each piece.

In a small bowl, whisk together yogurt, garlic, lemon juice, oregano, salt, black pepper, paprika, and cayenne pepper (if using).

Cover and refrigerate until ready to serve. Brush both sides of the skewers with olive oil.

Season with salt and pepper to taste.

Grill the skewers for 10-12 minutes, turning occasionally, or until the chicken is cooked through and the vegetables are tender. Serve hot with a dollop of yogurt sauce and garnish with chopped parsley (if desired).

Notes

Make sure to soak wooden skewers in water for at least 30 minutes before grilling to prevent them from catching fire. If using metal skewers, you can skip this step.

You can customize the kabobs to your taste by adding or substituting vegetables like mushrooms, bell peppers, and onions.

For easier grilling, make sure to leave a small space between each piece of food on the skewer to allow for even cooking. If you don’t have Greek yogurt, you can substitute it with regular yogurt, but the sauce might not be as thick and creamy.

You can prepare the yogurt sauce ahead of time and store it in the refrigerator for up to 2 days.

If you prefer a spicier sauce, you can add more cayenne pepper or some diced jalapenos to taste.
