Instructions:

1. Preheat your oven to 375°F (190°C).

2. In a mixing bowl, combine the cooked quinoa, chopped cilantro, garlic powder, onion powder, salt, and black pepper.

3. Cut the chicken breasts into small pieces and add them to the quinoa mixture.

4. In another bowl, whisk together the eggs, milk, lime juice, and half of the shredded cheese.

5. Combine the chicken and quinoa mixture with the egg mixture and stir until well combined.

6. Pour the mixture into a greased baking dish and top with the remaining shredded cheese.

7. Bake in the preheated oven for 25-30 minutes, or until the center is set and the cheese is bubbly.

8. Let it cool for a few minutes before slicing and serving.

Tips:

  • You can add diced bell peppers or onions for extra flavor.
  • This dish can be prepared in advance and refrigerated, then baked in the morning.
  • For added spice, include diced jalapeños or a pinch of cayenne pepper in the mixture.
