Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup freshly squeezed lemon juice
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 1 large onion, sliced
  • 2 lemons, sliced
  • Fresh parsley, chopped (optional)

Instructions

Preheat your oven to 425°F (220°C).

In a large bowl, whisk together lemon juice, olive oil, garlic, thyme, salt, and pepper.

Add the chicken to the bowl and toss to coat, making sure each piece is fully coated with the marinade.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

Line a large baking sheet with aluminum foil or parchment paper, leaving some overhang for easy cleanup.

Remove the chicken from the marinade, letting any excess liquid drip off.

Arrange the chicken on the prepared baking sheet in a single layer, leaving a little space between each piece.

Roast the chicken in the preheated oven for 20-25 minutes, or until cooked through.

While the chicken is cooking, place the sliced onion in a large skillet over medium heat.

Cook, stirring occasionally, until the onion is softened and caramelized, about 20-25 minutes.

After the chicken has roasted for 15 minutes, add the chicken broth to the skillet with the onion and bring to a simmer.

Stir to scrape up any browned bits from the bottom of the pan.

Once the chicken is done, remove it from the oven and place it on top of the onion mixture in the skillet.

Arrange the sliced lemons on top of the chicken and sprinkle with chopped parsley if desired.

Serve hot, spooning some of the juicy sauce over the top of each serving.

Notes

You can adjust the amount of garlic to your taste – if you’re not a huge fan, start with 2 cloves and add more to taste.

If you’re short on time, you can reduce the marinating time to 15 minutes, but the longer you let it sit, the more flavorful the chicken will be.

Make sure to not overcrowd the baking sheet, as this can affect the chicken’s cooking time and evenness.

You can prepare the onion mixture ahead of time – just refrigerate or freeze until you’re ready to assemble the dish.

Don’t skip the step of scraping up the browned bits from the bottom of the pan – this is where all the flavor is! You can serve this with some roasted veggies, mashed potatoes, or a side salad for a well-rounded meal.
