Lemon Chewy Crisps

These lemon chewy crisps are the perfect balance of sweet and tart. They are made with fresh lemons and have a light, crispy texture. The best part about these cookies is that they are so easy to make!

Ingredients

  • -1 cup butter, softened
  • -1 cup white sugar
  • -2 eggs
  • -1 tablespoon lemon zest
  • -3 teaspoons fresh lemon juice
  • -1 teaspoon vanilla extract
  • -1 teaspoon baking powder
  • -1/2 teaspoon baking soda
  • -2 cups all purpose flour

Instructions

1. Preheat your oven to 350 degrees F (175 degrees C).

2. In a large bowl, beat together the butter and sugar with an electric mixer on high speed until fluffy.

3. Beat in the remaining ingredients except for flour until well blended.

4. On low speed, mix in the flour just until it’s blended in.

5. Drop dough by rounded teaspoonfuls that are 1 1/2 inches apart onto ungreased cookie sheets . Sprinkle sugar or almonds on top of each cookie if desired .

6 Bake the cookies for 10 to 12 minutes until the edges are lightly browned . 7 Remove from cookie sheet and let cool on a wire rack for 1 minute before storing them in an airtight container at room temperature where they will stay fresh for up to one week
