Homemade Italian Cream Soda

Ingredients

  • Water, 2 cups
  • Granulated sugar, 1 1/2 cups
  • Light corn syrup, 1/2 cup
  • Unflavored gelatin, 2 tablespoons
  • Citric acid, 1/4 teaspoon
  • Sodium benzoate, 1/4 teaspoon
  • Natural flavorings (Italian cream soda flavor), 1/4 teaspoon
  • Carbonated water, 2 liters

Instructions

Combine the water and sugar in a medium saucepan, whisking until the sugar is dissolved. Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low and simmer for 5 minutes.

Remove the saucepan from the heat and let it cool slightly.

In a small bowl, sprinkle the unflavored gelatin over 1/4 cup of water and let it soften for 1-2 minutes. Add the softened gelatin to the saucepan, whisking until fully dissolved.

Add the light corn syrup, citric acid, sodium benzoate, and natural flavorings to the saucepan, whisking until well combined.

Let the mixture cool to room temperature. Once the mixture has cooled, refrigerate it until chilled.

To assemble the Italian cream soda, pour 1/2 cup of the sugar mixture into a glass filled with ice.

Top with 1 cup of carbonated water and stir gently. Repeat with the remaining ingredients to make 5 more servings.

Notes

Use a candy thermometer to ensure the sugar mixture reaches 240°F for a perfect syrup consistency.

Make sure to adjust the amount of citric acid according to your taste preferences, as some people prefer a stronger or milder flavor.

For a clearer soda, filter the mixture through a coffee filter or cheesecloth before refrigerating it.

If you prefer a more intense flavor, you can increase the amount of natural flavorings or add a few drops of food coloring to give it a fun color.
