Corn And Bacon Pizza

This Corn and Bacon Pizza is the perfect combination of sweet and savory, featuring fresh corn kernels and crispy bacon on top of a rich, melted mozzarella cheese base, all on a crispy homemade crust. It’s a flavorful twist on traditional pizza that’s sure to become a new favorite!

Ingredients

  • 1 1/2 cups warm water
  • 2 teaspoons active dry yeast
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 1 cup corn kernels
  • 7 slices of bacon, diced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

Start by activating the yeast in the warm water, let it sit for 5-7 minutes until it becomes frothy.

Add the olive oil, salt, and 2 cups of flour to the mixture, stir until it forms a sticky dough.

Gradually add the remaining 1 1/2 cups of flour, one cup at a time, until the dough becomes smooth and elastic.

Knead the dough for 5-7 minutes until it’s smooth and shiny.

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about an hour, or until it has doubled in size.

Preheat the oven to 425°F (220°C).

Punch down the dough and roll it out into a 12-inch circle, about 1/4 inch thick.

Transfer the dough to a greased pizza pan or baking sheet.

In a skillet, cook the diced bacon over medium heat until crispy.

Remove the bacon from the skillet and set it aside on a paper towel-lined plate.

Leave the grease in the skillet.

Add the corn kernels to the skillet and cook for about 5 minutes, or until they’re lightly toasted.

Season with salt to taste.

Spread the mozzarella cheese evenly over the dough, leaving a 1/2 inch border around the edges.

Top the cheese with the cooked bacon, corn kernels, and chopped cilantro.

Drizzle the olive oil over the top, and sprinkle with red pepper flakes if using.

Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.

Remove the pizza from the oven and let it cool for a few minutes before slicing and serving.

Notes

Make sure to use warm water for activating the yeast, as it’ll help the dough rise better.

If you don’t have a pizza pan, a baking sheet will work just fine! For a crisper crust, bake the pizza for an additional 2-3 minutes.

If you like a little heat, don’t skip the red pepper flakes – they add a nice kick! Fresh cilantro adds a nice freshness to the pizza, but feel free to substitute with parsley if you prefer.

When shaping the dough, try to maintain an even thickness to ensure the crust cooks evenly.

If you’re not using the red pepper flakes, you can omit them or substitute with some dried oregano for extra flavor.
