Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened applesauce
  • 1/2 cup canola oil
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 tablespoons white vinegar
  • 3 flax eggs*

Instructions

Preheat your oven to 350°F (180°C) and grease two 9-inch round cake pans. In a medium-sized bowl, whisk together the flour, sugar, baking powder, and salt.

Set aside.

In a large bowl, whisk together the applesauce, canola oil, and vanilla extract. Add the flour mixture to the applesauce mixture, whisking until just combined.

Don’t overmix! In a small bowl, whisk together the flax eggs and white vinegar.

Let it sit for a minute or two until it thickens and becomes gel-like. Add the flax egg mixture to the cake batter and whisk until smooth.

Divide the batter evenly between the prepared pans and smooth the tops.

Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Remove the cakes from the oven and let them cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.

Once the cakes are completely cool, you can frost and decorate them as desired.

Slice and serve!

Notes

Make sure to adjust the oven racks to accommodate the two 9-inch round cake pans, so they’re not overlapping. Flax eggs need a few minutes to sit and thicken, so don’t rush this step! Let it gel up before adding it to the batter.

Don’t overmix the batter, or you might end up with a dense cake.

Stop whisking once everything is just combined. If you’re new to using flax eggs, note that they can add a slightly nutty flavor to the cake.

This is totally normal! These cakes will be quite tender, so handle them gently when transferring them from the pans to the wire rack.

You can customize the frosting and decorations to your liking, but keep in mind that this cake is quite moist, so it might be better suited to lighter toppings. Cutting the cake into 7 slices might seem like a weird number, but trust us, these portions are perfect for a satisfying snack or dessert!
