Graham Cracker Cake I

This cake is so moist and delicious, and it’s made with graham crackers! It’s the perfect dessert for any occasion.

Ingredients

  • 2 cups graham cracker crumbs, 1 cup ground pecans, 1/2 cup cake flour, 2 teaspoons baking powder, 1/4 teaspoon salt, 1 cup unsalted butter (softened), 1 cup packed light brown sugar, 3 egg yolks (room temperature), 2 teaspoons vanilla extract, 1 cup milk (lukewarm), 3 egg whites (room temperature), 1/4 cup white sugar, 2 tablespoons confectioners’ sugar, 1-1/2 cups unsalted butter (softened), 1/2 cup packed dark brown sugar ,1/2 cup heavy whipping cream.

Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and line with parchment two 9 inch round pans.

2. Combine the crumbs, 1/2 cup pecans, flour, baking powder, and salt.

3. In a large bowl, cream the butter and the light brown sugar until fluffy. Slowly beat in the egg yolks, one at a time. Stir in the vanilla extract. Alternately add the milk and crumb mixture while beating on low speed.

4. Beat egg whites in a bowl until foamy before adding sugar slowly; beat to soft peaks then fold into crumb batter before pouring mixture into pans equally between both rounds..

5. Bake for 25 minutes or until tester comes out clean when inserted into center of cake(s). Allow to cool in pan(s) on rack for 10 minutes before inverting and cooling completely prior to frosting cake layers together once cooled..

6.)To Make Frosting: In a saucepan over medium heat, melt the 2 tablespoon sugar until it turns golden then remove from heat momentarily before adding 4 tablespoons of butter; swirl gently then whisk in dark brown sugar before placing back on now lowered heat source.. Bring mixture just to a boil
