Ingredients

  • 2 pounds mixed mushrooms (such as cremini, shiitake, and button), cleaned and stems removed
  • 6 tablespoons unsalted butter, softened
  • 3 cloves garlic, peeled and minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon paprika

Instructions

Preheat your oven to 425°F (220°C).

In a large bowl, whisk together olive oil, garlic, salt, black pepper, thyme, and paprika until well combined.

Add the cleaned mushrooms to the bowl and toss them to coat them evenly with the garlic-infused oil mixture.

Line a baking sheet with parchment paper or aluminum foil, and arrange the mushrooms in a single layer, leaving some space between each mushroom to allow for even roasting.

Dot the top of the mushrooms with softened butter, making sure each mushroom has a bit of butter on top.

Roast the mushrooms in the preheated oven for 20-25 minutes, or until they’re tender and caramelized, flipping them halfway through the cooking time.

Remove the mushrooms from the oven and let them cool slightly before serving.

Notes

For the best flavor, use a mix of mushroom types, as they have different textures and flavors that will complement each other.

Softened butter is key, so make sure to take it out of the fridge about 30 minutes before using.

Don’t overcrowd the baking sheet, as the mushrooms need room to roast evenly.

If using parchment paper, sprinkle a few drops of water on it before adding the mushrooms to prevent them from sticking.

Keep an eye on the mushrooms after 20 minutes, as the cooking time may vary depending on their size and type.

Letting the mushrooms cool slightly before serving will help them retain their juices.
