Ingredients

  • 1 (8 ounce) can fruit cocktail, drained
  • ¼ cup butter, softened
  • ⅓ cup white sugar
  • 1 egg
  • ¼ teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon maraschino cherry juice
  • ½ cup flaked coconut, toasted

Instructions

1. Preheat oven to 350 degrees F. Grease a 9 inch square pan and set it aside.

2. In a bowl, stir together flour, baking soda, baking powder, and salt.

3. In a large bowl, cream together the butter or margarine and sugar. Beat in the egg and vanilla extract until smooth.

4. Add the flour mixture to the creamed mixture alternately with the fruit cocktail syrup, beginning and ending with the flour mixture. Mix well after each addition.

5. Stir in chopped fruit, coconut flakes, and cherries until evenly distributed throughout batter6

7 .Pour batter into prepared pan and bake for 30-35 minutes or until golden brown 8 Allow to cool completely before cutting into squares
