- 8 hamburger buns
- 16 slices of cheese (such as American, cheddar, or a combination)
- 8 ounces bacon, sliced
- 2 large onions, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 pound ground beef
- 8 eggs
- 8 slices of bread (white or whole wheat)
- Butter or non-stick cooking spray for greasing the pan
Instructions
Preheat a non-stick skillet or griddle over medium heat, greasing it with butter or non-stick cooking spray. Cut out the centers of the bread slices to create a hole, reserving the cut-out bread for another use.
In a large skillet, cook the sliced bacon over medium heat until crispy, about 6-8 minutes.
Remove the cooked bacon from the skillet and set aside on a paper towel-lined plate. Add the sliced onions to the same skillet and cook until they’re translucent, about 3-4 minutes.
Add the minced garlic and cook for an additional minute.
Form the ground beef into 8 patties, about 3/4 inch thick. Season the patties with salt and pepper.
Add the patties to the skillet and cook for about 4-5 minutes per side, or until cooked to your desired level of doneness.
Meanwhile, toast the bread slices in the preheated skillet or griddle for about 2-3 minutes on each side, or until lightly browned. Assemble the burgers by spreading a slice of cheese on the bottom bun, followed by a beef patty, a few slices of bacon, a slice of toasted bread with an egg in the hole, and finishing with the top bun.
In a separate non-stick skillet, cook the eggs over easy, about 2-3 minutes per side, or until the whites are set and the yolks are cooked to your desired doneness.
Place the cooked eggs in the hole of the toasted bread, and place the assembly on top of the burger.
Notes
Use any type of cheese you like, but keep in mind that a milder cheese will let the other flavors shine, while a stronger cheese will give a bolder taste. Don’t overcook the bacon – you want it crispy, but still with some chew to it.
