Ingredients
- 2 1/4 cups all-purpose flour
- 1 cup rolled oats
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup unsalted butter, at room temperature
- 1 cup white granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup unsweetened cocoa powder
- Optional: nuts, chocolate chips, or dried cranberries for added flavor and texture
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat. In a medium-sized bowl, whisk together the flour, oats, baking soda, and salt.
Set aside.
In a large bowl, use an electric mixer to cream together the butter and sugars until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, followed by the vanilla extract.
Gradually mix in the cocoa powder until well combined.
Add the flour mixture to the wet ingredients and mix until just combined, being careful not to overmix. If desired, fold in nuts, chocolate chips, or dried cranberries for added flavor and texture.
Use a cookie scoop or spoon to drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
Bake for 12-14 minutes or until the edges are set and the centers are just slightly soft. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Repeat the baking process until all the dough has been used, which should yield about 9 cookies.
