  • 1 large can (28 oz) crushed tomatoes
  • 2 cups lamb or beef broth
  • 2 cups water
  • 1 cup freekeh (roasted green wheat)
  • Fresh parsley, chopped (optional)

Instructions

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and sauté until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute, stirring constantly to prevent burning.

Add the lamb pieces to the pot, stirring to coat with the oil and mix with the onion and garlic.

Cook for about 5 minutes, until the lamb is browned on all sides.

Add the cumin, coriander, paprika, cinnamon, turmeric, and cayenne pepper to the pot, stirring to combine.

Cook for 1-2 minutes, until the spices are fragrant.

Add the crushed tomatoes, lamb or beef broth, and water to the pot.

Season with salt and black pepper to taste.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.

Add the freekeh to the pot and continue to simmer, covered, for an additional 20-25 minutes, or until the freekeh is tender.
