  • 3 tablespoons extra-virgin olive oil, plus more for drizzling
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 pound lamb shoulder, cut into 1-inch pieces
  • 3 ribs celery, chopped
  • 3 ribs carrots, chopped
  • 1 (15 ounce) can diced tomatoes
  • 3 cups chicken broth
  • 2 cups water
  • 1 cup freekeh
  • 1/2 cup chopped fresh parsley
  • Salt and freshly ground black pepper
  • Lemon wedges, for serving (optional)


In a large pot or Dutch oven, warm the olive oil over medium heat.

Add the onion and cook until softened, about 5 minutes.

Stir in the garlic, cumin, ginger, cinnamon, and cayenne pepper (if using).

Cook for 1 minute until fragrant.

Add the lamb and brown on all sides.

Pour in the tomatoes, chicken broth, and water.

Bring to a boil, then reduce heat and simmer until the lamb is tender, about 1 hour.

Add the celery, carrots, and freekeh.

Simmer for 30 minutes, or until the freekeh is cooked through.

Season with salt and pepper to taste.

Stir in the parsley and serve hot, garnished with lemon wedges if desired.
