Ready Time
1 hrs 10 mins
Yields
9 servings
Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a medium-sized bowl, whisk together the flour, cocoa powder, baking powder, and salt.
Set aside.
In a large bowl, use an electric mixer to cream together the butter and sugar until light and fluffy, about 2 minutes. Beat in the eggs one at a time, followed by the vanilla extract.
Gradually mix in the dry ingredients until just combined, being careful not to overmix.
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie. Bake for 12-14 minutes or until the edges are set and the centers are slightly soft.
Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
You should end up with 9 delicious chocolate wafers, perfect for snacking or sandwiching with your favorite ice cream!
Notes
Make sure to not overmix the dough, as this can lead to tough wafers. You can also refrigerate the dough for up to 2 days if you want to make the wafers at a later time.
For an extra crispy wafer, bake for 14 minutes, but keep an eye on them to avoid burning.
If you want a chewier center, bake for 12 minutes. Don’t overcrowd the baking sheet, as this can cause the wafers to spread too much.
If you want to get fancy, you can also sprinkle the tops with powdered sugar or chopped nuts before baking.
