Ready Time

20 mins

Yields

6 servings

Ingredients

  • 1 and 1/2 cups rolled oats
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey
  • 1/4 cup chopped dark chocolate chips
  • 1/2 cup mixed dried fruit (cranberries, raisins, cherries)
  • 1/4 cup chopped pecans
  • Pinch of salt

Instructions

Line an 8×8 inch baking dish with parchment paper, making sure to leave some overhang on the sides for easy removal.

In a large mixing bowl, combine the oats and salt.

Stir until well combined.

In a separate bowl, cream together the peanut butter and honey until smooth and creamy.

Add the chopped dark chocolate chips to the peanut butter mixture and stir until the chocolate is melted and the mixture is well combined.

Fold the peanut butter mixture into the oat mixture until everything is well coated.

Stir in the mixed dried fruit and chopped pecans until they’re evenly distributed throughout the mixture.

Press the mixture into the prepared baking dish.

Refrigerate for at least 30 minutes to set.

Cut into 6 equal-sized bars.

Store in an airtight container at room temperature for up to 5 days or in the fridge for up to 2 weeks.

Notes

Use old-fashioned oats for a slightly nutty flavor.

If peanut butter is too thick, warm it up in the microwave for 10-15 seconds to soften.

You can customize the dried fruit to your liking, but the mixture of cranberries, raisins, and cherries adds a nice sweet and tangy flavor.

Make sure to not overmix the oats with the peanut butter mixture to maintain a nice texture.

If the mixture is too crumbly, add a bit more honey.

Refrigerate the bars for at least 30 minutes to help them set, but it’s best if you can let them chill for a few hours.

You can also cut the bars into smaller sizes for a quick snack or larger sizes for a more filling treat.
