Chocolate Coated Peanut Butter Crackers

Ingredients
- 35-40 saltine crackers
- 1/2 cup creamy peanut butter
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
Instructions
Line a large baking sheet with parchment paper or a silicone mat. In a medium-sized bowl, mix together the peanut butter, sugar, and butter until smooth and creamy.
Stir in the vanilla extract until well combined.
Arrange the saltine crackers on the prepared baking sheet in a single layer, leaving about 1 inch of space between each cracker. Spread about 1 teaspoon of the peanut butter mixture onto each cracker, leaving a small border around the edges.
Place the baking sheet in the freezer for about 10-15 minutes, or until the peanut butter is firm to the touch.
Melt the chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval, until smooth. Remove the baking sheet from the freezer and dip each peanut butter-topped cracker into the melted chocolate, coating completely.
Place the coated crackers on a piece of parchment paper or a silicone mat.
Refrigerate the chocolate-covered crackers for at least 30 minutes to set the chocolate. Serve chilled and store any leftovers in an airtight container in the refrigerator for up to 5 days.
Notes
Use a high-quality peanut butter for the best flavor, and make sure it’s creamy – crunchy peanut butter won’t work as well here.
For easy spreading, make sure the peanut butter mixture is at room temperature.
If using a microwave to melt the chocolate, be careful not to overheat it, as it can seize up quickly.
To get a smooth chocolate coating, make sure the peanut butter is firm to the touch before dipping into the melted chocolate.
For a fun twist, try using different flavors of chocolate chips or adding a sprinkle of sea salt on top of the chocolate for added flavor and texture.
To store, stack the crackers between layers of parchment paper to prevent sticking.
