Yields

6 servings

Ingredients

  • 2 cups rolled oats, 1 cup dried cherries, 1/2 cup unsweetened shredded coconut, 1/2 cup dark brown sugar, 1/4 cup creamy peanut butter, 1/4 cup honey, 1/4 cup chopped dark chocolate or chocolate chips, 1/4 teaspoon salt, 1/4 teaspoon vanilla extract.

Instructions

In a large mixing bowl, combine the rolled oats, dried cherries, and unsweetened shredded coconut. Stir until well combined.

In a separate bowl, mix together the dark brown sugar, creamy peanut butter, and honey until smooth.

Add the chopped dark chocolate or chocolate chips to the sugar mixture and stir until the chocolate is melted and well combined. Add the salt and vanilla extract to the sugar mixture and stir to combine.

Add the sugar mixture to the oat mixture and stir until everything is well combined and a dough forms.

Press the dough into a lined or greased 8×8 inch baking dish. Refrigerate for at least 30 minutes or until firm.

Cut into 6 bars.

Store in an airtight container in the refrigerator for up to 5 days.

Notes

These granola bars are perfect for snacking on the go, and you can easily customize them by using different types of nuts or dried fruits.

Be sure to press the dough firmly into the baking dish to get clean-cut bars.

If the dough is too sticky, chill it for about 10 minutes before pressing it into the dish.

For a crunchier bar, bake the mixture in a preheated oven at 350°F for 20-25 minutes, then let cool completely before cutting into bars.
