Caramel Pecan Cookies
These delicious caramel pecan cookies are made with brown sugar, butter, and chopped pecans. They are perfect for any occasion!
Ingredients
- 1 cup butter, softened
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 ¼ cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- Salt to taste (optional)
- 1 cup chopped pecans, divided
- 1 tablespoon white sugar or turbinado sugar for topping cookies before baking (optional)
- 5 rolls chocolate-covered caramel candies
Instructions
1. In a large bowl, cream together the butter, 1 cup white sugar and brown sugar until smooth.
2. Beat in the eggs one at a time then stir in vanilla
3. Combine flour cocoa and baking soda; stir into mixture until well blended
4. Stir in 1/2 cup of pecans
5 Press 1 tablespoon of cookie dough around each chocolate coated caramel forming a ball
6 Dip one side of each ball into the pecan mixture and place on ungreased baking sheets 2 inches apart Pecan side up
7 Bake for 8 minutes (cookies will look soft)
8 Cool on pans for one minute before removing to wire racks
