Water as needed to thin batter // omit if using fresh lemon juice above. ¼ cup finely chopped blanched almonds // slivered or whole are also fine ¼ cup finely chopped pecans Glaze: ½ – 1 ounce bottle almond extract or concentrated Lemonade Mix (undiluted) confectioners’ sugar optional: red and/or green food coloring

Instructions

1. Preheat oven to 375 degrees F (190 degrees C). Grease an 8×5-inch loaf tin thoroughly.

2. Beat eggs in a medium bowl. Add milk and melted butter; mix well.

3. Sift together flour, baking powder, salt, and cinnamon into a large mixing bowl. Add sugar, prepared fruits and nuts, and mix well.

4. Add egg mixture to fruit and nut mixture, stirring just enough to blend. Pour batter into the greased loaf tin/pan. Let stand for 20 minutes so the batter can settle..

5 Bake on middle rack for 60 to 70 minutes until golden brown.. Turn out onto wire rack/cooling grid and allow to cool for several hours before slicing into it..
