Baked Potato On The Grill

We’re talkin’ crispy bacon, melted cheese, tangy sour cream, and fresh green onions all piled high on a perfectly grilled potato.

Ingredients

  • 5-6 large baking potatoes
  • 10 tablespoons olive oil
  • 5 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 10 slices of bacon, cut into 1-inch pieces
  • 10 tablespoons shredded cheddar cheese
  • 10 tablespoons sour cream
  • 10 tablespoons chopped green onions

Instructions

Preheat your grill to medium-high heat.

While it’s heating up, scrub those potatoes clean and poke some holes in them with a fork to allow steam to escape.

Rub the potatoes with olive oil, making sure to get some under the skin as well.

Sprinkle the minced garlic all over them, then sprinkle salt, black pepper, paprika, chili powder, and cayenne pepper (if using) evenly among the potatoes.

Place the potatoes directly on the grill grates, closing the lid.

Let them cook for about 45-60 minutes, or until they’re tender when pierced with a fork.

After about 30 minutes, start cooking the bacon pieces in a skillet over medium heat until crispy.

Remove the bacon from the skillet with a slotted spoon, draining on paper towels.

Once the potatoes are done, remove them from the grill and let them cool for a few minutes.

Slice them in half lengthwise and fluff up the insides with a fork.

Divide the crumbled bacon, shredded cheese, sour cream, and chopped green onions among the potatoes, spooning them into the cavities.

Notes

For this recipe, choose potatoes that are similar in size so they cook evenly.

You can adjust the amount of garlic, spices, and cheese to your taste.

If using cayenne pepper, start with a small amount and add more to taste.

Make sure to poke enough holes in the potatoes to allow steam to escape while grilling.

Keep an eye on the potatoes while they’re grilling, as the cooking time may vary depending on their size.

You can prepare the toppings ahead of time, but wait to assemble the potatoes until just before serving.

If you want to get ahead, cook the bacon and prep the toppings a day or two in advance, storing them in the fridge until ready to assemble.

Don’t overload the potatoes with toppings, as you want to be able to see the beautiful grill marks underneath.
