Ancient Honey Cakes Topped With Hemp Seeds

Ingredients
- 2 cups all-purpose flour
- 1/2 cup honey
- 1/4 cup coconut oil
- 2 large eggs
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup chopped fresh mint leaves
- 1/4 cup hemp seeds for topping
Instructions
Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper. In a large mixing bowl, whisk together the flour, baking soda, and salt.
In another bowl, whisk together the honey, coconut oil, eggs, and vanilla extract until smooth.
Add the chopped mint leaves to the wet ingredients and whisk until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Divide the dough into 6 equal portions and shape each portion into a ball.
Flatten each ball slightly into a disk shape. Place the disks onto the prepared baking sheet, leaving about 2 inches of space between each cake.
Bake for 18-20 minutes or until the edges are lightly golden.
Remove the cakes from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Just before serving, sprinkle the hemp seeds on top of each cake.
Notes
Make sure to use high-quality honey for the best flavor. If you don’t have coconut oil, you can substitute it with another neutral-tasting oil.
The chopped fresh mint leaves add a lovely freshness, but feel free to omit or substitute with another herb if you prefer.
To toast the hemp seeds for added crunch, simply place them in a dry skillet over medium heat, stirring frequently, until fragrant and lightly browned. Be gentle when shaping the dough into balls and disks, as they can be delicate.
If you find the dough too sticky, add a little more flour.
For an extra-special touch, drizzle the cakes with a little extra honey before serving. These cakes will keep for up to 3 days stored in an airtight container at room temperature.
