Ingredients
- 2 ripe bananas, mashed
- 1/2 cup rolled oats
- 1/4 cup bran flakes
- 1/4 cup brown sugar
- 1/2 cup all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup unsalted butter, softened
- 1 large egg
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a large mixing bowl, whisk together the oats, bran flakes, brown sugar, flour, baking soda, salt, cinnamon, and nutmeg.
In a separate bowl, cream together the mashed bananas and softened butter until smooth.
Beat in the egg until well combined. Add the dry ingredients to the banana mixture and stir until just combined.
Do not overmix.
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie. Bake for 12-15 minutes, or until the edges are lightly golden.
Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Yield: 4 cookies.
