Sesame Tomato And Cucumber Salad
This refreshing salad combines the sweetness of cherry tomatoes, the crunch of cucumber, and the nutty flavor of sesame seeds, all tied together with a tangy dressing. The fresh parsley and mint add a bright, herbaceous note, making this salad the perfect side dish for a warm weather gathering.

Ingredients
- 2 cups cherry tomatoes, halved
- 1 large cucumber, peeled, seeded, and thinly sliced
- 1/4 cup sesames seeds
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
- 3/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint leaves
Instructions
In a large bowl, combine the halved cherry tomatoes and sliced cucumber.
In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper to make the dressing.
Pour the dressing over the tomato and cucumber mixture, and toss to coat.
Sprinkle the sesame seeds over the top of the salad and toss again to combine.
Stir in the chopped parsley and mint leaves.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Before serving, give the salad a good stir and adjust the seasoning if needed.
Serve chilled, dividing the salad among 7 plates.
Notes
Use the freshest and ripest cherry tomatoes for the best flavor and texture. Adjust the amount of honey to your taste, depending on how sweet you like your dressings.
For an extra crunchy salad, toast the sesame seeds in a small skillet over medium heat, stirring often, until lightly browned and fragrant.
If you prefer a stronger vinegar flavor, use more apple cider vinegar or add a splash of balsamic vinegar to the dressing. Don’t over-dress the salad, as the flavors will meld together while it chills in the refrigerator.
