Ingredients

  • 12-16 spears fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh parsley

Instructions

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.

Toss the asparagus spears with olive oil, salt, and pepper on the prepared baking sheet.

Roast in the oven for 12-15 minutes, or until tender and slightly caramelized. Remove the asparagus from the oven and let it cool to room temperature.

In a small bowl, whisk together lemon juice and Dijon mustard until smooth.

In a large bowl, combine the cooled asparagus, crumbled feta cheese, chopped chives, and chopped parsley. Drizzle the lemon-mustard dressing over the top and toss to combine.

Serve immediately, garnished with additional chives and parsley if desired.

Notes

Use thick asparagus spears for this recipe, as they’ll hold their shape better when roasting.

Make sure to pat them dry with a paper towel before tossing with olive oil, salt, and pepper to prevent steam from building up in the oven.

Don’t overcrowd the baking sheet, as this can also prevent the asparagus from roasting evenly.

If necessary, roast in batches to ensure they have enough room.

Let the asparagus cool completely to room temperature, as this will help it retain its texture and prevent it from becoming mushy when combined with the other ingredients.

You can adjust the amount of lemon juice and Dijon mustard to taste, depending on how tangy you like your dressing.

Start with the recommended amount and add more if needed.
