Buffalo Chicken Quesadillas

Ingredients

  • boneless, skinless chicken breasts, cut into small pieces 1 1/2 pounds
  • shredded cheddar cheese 2 1/4 cups
  • tortillas 9 large flour
  • ranch dressing 1 cup
  • hot sauce 1/2 cup
  • green onions, chopped 1/2 cup
  • shredded Monterey Jack cheese 1 1/2 cups
  • vegetable oil 2 tablespoons
  • salt and pepper to taste

Instructions

In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken to the skillet and cook until browned, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the chopped green onions and cook until they are softened, about 1 minute.

In a large bowl, combine the cooked chicken, ranch dressing, and hot sauce.

Mix well until the chicken is fully coated. Preheat a large skillet or griddle over medium heat.

Place a tortilla in the skillet and sprinkle shredded cheddar cheese and Monterey Jack cheese on half of the tortilla.

Add some of the chicken mixture on top of the cheese. Fold the tortilla in half to enclose the filling.

Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.

Flip the quesadilla and cook for an additional 2-3 minutes or until crispy and the cheese is melted. Repeat with the remaining tortillas and filling ingredients.

Cut the quesadillas into wedges and serve hot.

Season with salt and pepper to taste.

Notes

Make sure to not overcrowd the skillet when cooking the chicken, as this can lower the temperature of the skillet and prevent browning. Use a thermometer to check the internal temperature of the chicken; it should reach 165°F.

Don’t overfill the tortillas, as this can cause them to tear when folding.

If the cheese doesn’t melt completely, you can place the quesadilla under the broiler for an additional 30 seconds to 1 minute. To prevent the quesadillas from becoming soggy, cook them just before serving.

You can customize the level of heat in the quesadillas by using more or less hot sauce.
