  • 1 can of black beans, drained and rinsed
  • 1/2 cup of diced red onion
  • 1/4 cup of diced fresh cilantro
  • 1/4 cup of diced fresh scallions
  • 1/4 cup of lime juice
  • 1/4 cup of olive oil
  • 1 avocado, diced
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of smoked paprika
  • Salt and pepper, to taste
  • 1 (5-ounce) can of tuna packed in water, drained
  • 4 corn tortillas
  • Optional toppings: diced radishes, diced avocado, sour cream, diced tomatoes, shredded lettuce

Instructions

Drain and rinse the can of black beans, then set aside. In a medium-sized bowl, whisk together lime juice, olive oil, cumin, smoked paprika, salt, and pepper to make the dressing.

Add the diced red onion, cilantro, and scallions to the bowl and toss to combine.

Open the can of tuna and drain the liquid. Flake the tuna into the bowl with the onion mixture and gently fold until combined.

Cut the avocado into small pieces and gently fold into the tuna mixture.

Warm the corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. Assemble the tostadas by spooning the tuna mixture onto a tortilla and topping with desired toppings.
