Wild Rice Stuffing

Ingredients
- 2 cups wild rice
- 1/2 cup chopped celery
- 1/2 cup chopped yellow onion
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon poultry seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon sage
Instructions
Rinse the wild rice in a fine-mesh strainer under cold water, then drain well.
In a large saucepan, bring 4 cups of water to a boil.
Add 1 tablespoon of olive oil and 1 teaspoon of salt.
Add the wild rice, reduce heat to low, cover, and simmer for about 40-45 minutes or until the water has been absorbed and the rice is tender.
While the wild rice is cooking, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
Add the chopped celery and onion and cook, stirring occasionally, until they are tender and lightly browned, about 8-10 minutes.
Stir in the thyme, poultry seasoning, salt, pepper, and sage.
Cook for 1 minute.
In a large bowl, combine the cooked wild rice, the celery and onion mixture, and chopped parsley.
Mix well to combine.
Notes
Use short-grain wild rice for the best results, as it’s plumper and chewier than long-grain. Make sure to rinse the wild rice well to remove excess starch, which helps it cook evenly.
While cooking the wild rice, stir it occasionally to prevent it from sticking to the bottom of the pan.
If the water is absorbed before the rice is tender, add a little more water and continue cooking. Use a large skillet to cook the celery and onion mixture, as it allows for even browning and prevents overcrowding.
Don’t overcook the celery and onion, as they should still retain some crunch.
Customize the recipe to your taste by adding other ingredients like dried cranberries, chopped apples, or toasted pecans to the wild rice mixture. This recipe makes about 5 servings, perfect as a side dish for your holiday meal or special occasion.
