Yields
10 servings
Ingredients
- 4 cups diced seedless watermelon (about 1 small to medium-sized melon)
- 2 cups plain Greek yogurt
- 1/2 cup granulated sugar
- 1/4 cup honey
- 1/2 teaspoon kosher salt
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped fresh mint leaves
- Ice cubes (optional)
- Paper towels or a clean kitchen towel for drying
Instructions
In a blender or food processor, combine the diced watermelon, Greek yogurt, granulated sugar, honey, kosher salt, and vanilla extract. Blend the mixture until smooth and creamy.
Strain the mixture through a fine-mesh sieve into a large bowl, pressing on the solids to extract as much liquid as possible.
Discard the solids. Stir in the chopped fresh mint leaves.
Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours or overnight to allow the flavors to meld.
Just before serving, scoop the mixture into bowls or glasses. If desired, place an ice cube in each bowl to chill the mixture further.
Dry the outside of each bowl or glass with paper towels or a clean kitchen towel to prevent drips.
Serve the Watermelon Fwang chilled, garnished with additional fresh mint leaves if desired.
Notes
Make sure to use a ripe watermelon for the best flavor, and remove any white or pale green parts, as they can be bitter.
If you want a thicker consistency, you can add a little more Greek yogurt or even some ice cream.
For a fancier look, garnish with edible flowers, shaved ice, or even a sprinkle of basil.
Keep in mind that the flavor will mellow out after it’s chilled, so don’t be afraid to adjust the sweetness or mintiness to taste.
If you’re serving a crowd, consider making a double batch – it’s sure to be a hit!
