Ingredients

  • 1 ripe pineapple, cut into 1-inch chunks
  • 1 ripe mango, cut into 1-inch chunks
  • 1 cup fresh kiwi, peeled and cut into 1-inch chunks
  • 1 cup fresh strawberries, hulled and sliced
  • 1 banana, cut into 1-inch slices
  • 10-12 bamboo skewers, soaked in water for at least 30 minutes
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • Sprinkle of shredded coconut, for garnish
  • Fresh mint leaves, for garnish

Instructions

Start by preparing your fruit by placing the pineapple, mango, kiwi, strawberries, and banana chunks in a large bowl. In a small bowl, whisk together the honey and lime juice until well combined.

Pour the honey-lime mixture over the fruit and toss to coat.

Let it sit for at least 15 minutes to allow the flavors to meld. Meanwhile, remove the bamboo skewers from the water and pat them dry with a paper towel.

Thread a piece of pineapple, mango, kiwi, strawberry, and banana onto each skewer, leaving a small space between each piece of fruit.

Repeat the pattern until all the fruit is used up, making sure to end with a piece of pineapple on each skewer. Garnish each skewer with a sprinkle of shredded coconut and a fresh mint leaf.

Serve immediately, or cover and refrigerate for up to 2 hours before serving.

Note: You should end up with 10-12 skewers, which will serve 5 people.

Notes

For this recipe, make sure to choose ripe fruit for the best flavor and texture.

You can also customize the fruit selection to your liking, but this combination is a classic! The honey and lime juice mixture is what brings all the flavors together, so don’t skip that step.

Letting it sit for 15 minutes will make a big difference.

Make sure to soak those bamboo skewers for at least 30 minutes to prevent them from catching fire while handling.

To get all the fruit onto the skewers evenly, try to maintain the same size chunks for each type of fruit.
