Ingredients

  • 3 large egg yolks
  • 1/2 cup (120 ml) heavy cream
  • 1/2 cup (120 g) granulated sugar
  • 1/4 cup (60 g) granulated sugar (for caramelizing)
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)

Instructions

In a medium bowl, whisk together the egg yolks, heavy cream, granulated sugar, and kosher salt until well combined.

Add the vanilla extract and ground cinnamon (if using) to the bowl and whisk until smooth.

Pour the mixture into 5 (1/2 cup) ramekins or small cups.

Place the ramekins in a single layer in a large slow cooker.

Add enough hot water to the slow cooker to come halfway up the sides of the ramekins.

Cover the slow cooker and cook on low for 2-3 hours, or until the edges are set and the centers are still slightly jiggly.

Remove the ramekins from the slow cooker and let them cool to room temperature.

Cover and refrigerate for at least 2 hours or overnight.

Just before serving, sprinkle a thin layer of sugar over the top of each ramekin.

Caramelize the sugar with a kitchen torch or under the broiler until golden brown.

Serve chilled, with the caramelized sugar on top.

Notes

Make sure to use room-temperature egg yolks for easiest whisking and incorporation. If using cinnamon, reduce the amount if you’re not a big fan of the spice, as it can be potent.

For a more golden caramel, use a kitchen torch; for a crunchy, caramelized sugar, use the broiler.

Don’t overcook, as the centers should still be slightly jiggly; this ensures a silky, creamy texture. Refrigerate the ramekins at least 2 hours or overnight to allow the flavors to meld and the mixture to set.

If you’re not serving immediately, you can caramelize the sugar just before serving.
