Skillet Pita Pizzas

If you’re looking for an easy and delicious way to make pizza at home, look no further than these skillet pita pizzas! With just a few simple ingredients, you can have homemade pizzas ready in no time. I like to top mine with lots of vegetables and a little bit of cheese, but you can really use whatever toppings you like. These are great for a quick weeknight meal or even as party food.   • 4 pita rounds, 8- to 12-inches
  • 1 1/2 pounds fresh mozzarella, thinly sliced
  • 4 medium tomatoes, thinly sliced
  • 1 pint mixed cherry tomatoes, halved
  • Olive oil for sprinkling
  • Kosher salt and freshly ground black pepper


1. Preheat oven to 350 degrees F.

2. Use scissors to cut around the edge of each pita to make two thin rounds. Separate the rounds and set them on baking sheet with the rough sides facing up.

3. Use a thin, sharp knife to slice the mozzarella as thinly as possible. It doesn’t matter if you don’t make even or perfect rounds. Divide the mozzarella among the pitas. The cheese doesn’t need to cover the rounds completely.

4. Add a few slices of the large tomatoes, enough to almost cover the mozzarella. Fill in gaps with cherry tomatoes then drizzle with olive oil, sprinkle with salt and pepper

5.. Heat a cast-iron or other heavy skillet over medium heat for 3 minutes, until a flick of water sizzles and evaporates on contact then add 1 pizza round and cover pan

6.. Cook for 3-5 minutes or until mozzarella melts at edges then use wide metal spatula to lift pizza out of pan and transfer o plate. Cook remaining pizzas in same way (If you have more than one skillet, use them to cook several pizzas at once.)
