Ingredients
- 9 large tortilla wraps
- 540g plain Greek yogurt
- 180g mixed berries (fresh or frozen)
- 270g high-protein granola
- 9 large eggs
- 135g crumbled reduced-fat feta cheese
- 9 tablespoons chopped fresh parsley
- 54g unsalted butter, melted
- 9 teaspoons honey
- Salt and pepper, to taste
Instructions
Crack 9 large eggs into a bowl and whisk them together with a pinch of salt and pepper until the whites and yolks are fully incorporated. Set aside.
In a separate bowl, mix together 540g of plain Greek yogurt, 180g of mixed berries, and 9 teaspoons of honey until the berries are fully coated with the yogurt mixture.
Heat a non-stick skillet over medium heat and add 54g of unsalted butter. Once melted, pour in the egg mixture and scramble the eggs until they’re cooked through.
Set aside.
In a separate pan, warm 9 large tortilla wraps over medium heat for about 30 seconds on each side. This will make them more pliable and easier to roll.
To assemble the wraps, lay a tortilla wrap flat and spread a layer of the yogurt mixture on one half of the wrap, leaving a 1-inch border around the edges.
On top of the yogurt mixture, add a spoonful of scrambled eggs, 30g of high-protein granola, and 15g of crumbled reduced-fat feta cheese. Finish with a sprinkle of 1 tablespoon of chopped fresh parsley on top of the filling.
Fold the tortilla wrap in half to enclose the filling and repeat with the remaining ingredients to make 9 breakfast wraps.
