- 2 cups frozen pineapple chunks
- 1 cup frozen coconut flakes
- 1 1/2 cups plain Greek yogurt
- 1/2 cup coconut milk
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
- Ice cubes (as needed)
- Fresh pineapple wedges and shredded coconut for garnish (optional)
Instructions
Add the frozen pineapple chunks, frozen coconut flakes, Greek yogurt, coconut milk, and honey to a blender.
Blend on high speed until smooth and creamy.
Add the vanilla extract and blend until well combined.
Taste and adjust the sweetness or consistency as needed by adding more honey or ice cubes.
Blend again until the ice is crushed and the smoothie is thick and frosty.
Pour into glasses and garnish with fresh pineapple wedges and shredded coconut, if desired.

Notes
For a thicker smoothie, use less coconut milk and for a thinner smoothie, use more.
If using a high-powered blender, you can blend in the ice cubes right away but if not, it’s better to add them slowly to avoid any chunks.
Don’t overdo it with the honey, as pineapple is naturally sweet, you might not need the full 1/4 cup.
If you can’t find frozen coconut flakes, you can toast some shredded coconut in a skillet and let it cool before using.
