Ready Time

15 mins

Yields

6 servings

Ingredients

  • Ripe peaches, 3 large
  • Unsalted butter, 1 cup (2 sticks), softened
  • Granulated sugar, 1/2 cup
  • Honey, 2 tbsp
  • Kosher salt, 1/4 tsp
  • Pure vanilla extract, 1 tsp

Instructions

Preheat your oven to 400°F (200°C). Peel and pit the ripe peaches, then chop them into 1-inch pieces.

Place the peach pieces on a baking sheet lined with parchment paper, making sure not to overcrowd.

Roast the peaches in the oven for about 20-25 minutes, or until they’re tender and lightly caramelized. Remove the peaches from the oven and let them cool slightly.

In a blender or food processor, puree the roasted peaches until smooth.

In a medium-sized bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the honey, kosher salt, and pure vanilla extract to the bowl, mixing until well combined.

Add the roasted peach puree to the bowl and mix until smooth and creamy.

Transfer the peach honey vanilla butter to an airtight container, cover, and refrigerate for at least 30 minutes to allow the flavors to meld together. This will yield 6 servings.

Notes

To get the best flavor out of your peaches, choose ripe ones and make sure to not overcrowd them on the baking sheet, so they roast evenly.

If using a blender, make sure to blend the peaches in batches if necessary, so they get fully broken down and smooth.

Don’t overmix the butter mixture, or it’ll become too light and fluffy.

For a darker, richer flavor, roast the peaches for 25 minutes, and for a lighter flavor, roast them for 20 minutes.
