Ingredients

  • 3 ripe peaches, diced
  • 1 ripe avocado, halved, pitted, and diced
  • 1/2 red onion, diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/2 cup fresh cilantro leaves, chopped
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt

Instructions

In a large mixing bowl, gently combine the diced peaches, avocado, red onion, and jalapeño pepper.

Be gentle not to mash the avocado.

Add the chopped cilantro leaves to the bowl and stir until they’re evenly distributed.

Squeeze the fresh lime juice over the mixture and sprinkle the salt on top.

Toss everything together until the flavors are well combined.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

Before serving, give the mixture a good stir and adjust the seasoning if needed.

Serve the peach guacamole chilled, garnished with extra cilantro leaves if desired.

You can serve it with tortilla chips, on tacos, or as a topping for your favorite dishes.

Notes

Use ripe but firm peaches for the best results, as they’ll hold their shape better in the mixture. If they’re too ripe, they might become mushy.

To prevent the avocado from browning, sprinkle a little lemon or lime juice on the exposed areas before adding it to the mixture.

If you’re not a fan of spicy food, feel free to reduce the amount of jalapeño pepper or omit the seeds and membranes, which contain most of the heat. For a more vibrant color, use a red or orange variety of peach, like a Crimson Lady or a Tropic Snow.

Adjust the amount of lime juice to your taste, depending on how juicy your peaches are.

If they’re very ripe, you might not need as much juice. Experiment with other combinations, like adding some diced mango or pineapple to create a tropical twist on traditional guacamole.
