Ingredients

  • 12 oz (340g) pasta of your choice
  • 18 slices of bacon, diced
  • 3 cups (360g) fresh or frozen peas
  • 2 cups (475ml) chicken broth
  • 1/2 cup (115g) grated parmesan cheese
  • 2 tbsp (30g) olive oil
  • 1 tsp (5g) dried basil
  • 1 tsp (5g) dried parsley
  • Salt and pepper, to taste

Instructions

Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

In a large skillet, heat the olive oil over medium heat.

Add the diced bacon and cook until crispy, about 6-8 minutes. Remove the bacon from the skillet with a slotted spoon and set aside on a paper towel-lined plate.

In the same skillet, add the peas and cook until tender, about 3-5 minutes.

Add the chicken broth, dried basil, and dried parsley to the skillet. Stir to combine and bring to a simmer.

Add the cooked pasta to the skillet, tossing to coat with the pea and broth mixture.

If the mixture seems dry, add some of the reserved pasta water. Stir in the parmesan cheese until melted and well combined.

Add the cooked bacon back into the skillet and toss to combine.

Season with salt and pepper to taste. Serve hot and enjoy!

Notes

Use a variety of pasta shapes and colors to make the dish more visually appealing. Make sure to not overcook the pasta as it will continue to cook a bit after draining.

For a smoky flavor, use applewood-smoked bacon instead of regular bacon.

Add some diced onions or garlic to the skillet with the bacon for added flavor. If using frozen peas, thaw them first and pat dry with paper towels to remove excess moisture.

Save some of the pasta water before draining, as it’s perfect for thinning out the sauce if needed.

Don’t overcook the peas, they should retain some crunch for texture. You can also add some diced chicken or ham to make it a more substantial meal.
