Instructions

Preheat your oven to 400°F (200°C).

In a large bowl, whisk together olive oil, garlic, orange juice, lime juice, oregano, cumin, smoked paprika, salt, and black pepper.

Add the pork cubes to the bowl and toss to coat, making sure they’re evenly covered with the marinade.

Remove the pork from the marinade, letting any excess liquid drip off.

Roast the pork in the preheated oven for 25-30 minutes, or until it reaches an internal temperature of 145°F (63°C).

Remove the pork from the oven and let it rest for 5-10 minutes before serving.

Don’t be shy with the garlic – those two cloves will mellow out during the marinade time.
