Mixed Berry Balsamic Vinaigrette

Ingredients
- 2 cups mixed berries (such as blueberries, raspberries, blackberries, or strawberries)
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 2 tablespoons Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
Rinse the mixed berries and pat them dry with a paper towel to remove excess moisture.
In a blender or food processor, puree the berries until they’re smooth and well-crushed.
Strain the mixture through a fine-mesh sieve into a large bowl, pressing on the solids to extract as much juice as possible.
Discard the solids.
In a small bowl, whisk together the Dijon mustard and honey until smooth.
Add the mustard-honey mixture to the berry juice and whisk until well-combined.
In a separate small bowl, whisk together the balsamic vinegar and olive oil.
Slowly pour the vinegar-oil mixture into the berry juice mixture, whisking constantly until fully incorporated.
Add the salt and black pepper to the mixture and whisk until smooth.
Taste and adjust the seasoning as needed.
Transfer the vinaigrette to an airtight container and store it in the refrigerator for up to 5 days.
Give it a good stir before using.
This recipe makes about 5 servings.
Notes
Mixed berries can be fresh or frozen, but if using frozen, thaw and pat dry with a paper towel before using.
Berry mixture can be made ahead and refrigerated for up to a day before straining and adding remaining ingredients.
For a lighter vinaigrette, use less olive oil or substitute with avocado oil.
To reduce sweetness, use less honey or substitute with maple syrup.
This vinaigrette makes a great marinade for grilled chicken or as a dressing for spinach or mixed greens salads.
Shake well before using, as vinaigrette may separate during storage.
