  • 1 cup dried cannellini beans, soaked overnight and drained
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1 (28-ounce) can whole peeled tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 pounds Italian chicken sausage, sliced
  • 2 tablespoons olive oil
  • 9 cups chicken broth

Instructions

Drain and rinse the cannellini beans, then set them aside.

Heat the olive oil in a large pot over medium heat.

Add the chopped onion, minced garlic, chopped carrots, and chopped celery.

Cook, stirring occasionally, until the vegetables are tender, about 8-10 minutes.

Add the sliced Italian chicken sausage to the pot, breaking it up with a spoon as it cooks, until no longer pink, about 5-7 minutes.

Add the dried basil, dried oregano, salt, black pepper, and red pepper flakes.

Cook for 1 minute.

Add the can of whole peeled tomatoes, chicken broth, and the cooked cannellini beans to the pot.

Stir to combine, then bring the stew to a boil.

Reduce the heat to low and simmer, covered, for 30 minutes or until the flavors have melded together and the beans are tender.

Serve hot, garnished with fresh basil leaves, if desired.

Notes

Use leftover chicken broth to make the stew more flavorful.

You can also use other types of beans like kidney or pinto beans if you prefer.

Make sure to adjust the cooking time accordingly.

Use sweet or hot Italian sausage depending on your taste preferences.

If using hot sausage, reduce the amount of red pepper flakes added.
