Ready Time
30 mins
Yields
6 servings
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/2 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup pineapple chunks
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, cut into large pieces
- 1 small red onion, cut into large pieces
- 10 bamboo skewers
- Fresh parsley, chopped (for garnish)
- Salt and pepper, to taste
Instructions
Preheat your grill to medium-high heat.
In a large bowl, whisk together honey, soy sauce, garlic, olive oil, ginger, and red pepper flakes (if using).
Add the shrimp and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
Meanwhile, thread pineapple chunks, cherry tomatoes, red bell pepper pieces, and red onion pieces onto the bamboo skewers, leaving a little space between each piece.
Remove the shrimp from the marinade, letting any excess liquid drip off.
Thread the shrimp onto the skewers, dividing them evenly among the 10 skewers.
Season the skewers with salt and pepper to taste.
Grill the skewers for 8-10 minutes, turning occasionally, until the shrimp are pink and cooked through.
Garnish with chopped parsley and serve immediately.
Notes
Use fresh and high-quality ingredients, especially the shrimp, to ensure the best flavor and texture. For a spicier version, don’t skip the red pepper flakes! You can also customize the skewers with your favorite vegetables or fruits.
To prevent the bamboo skewers from burning, soak them in water for at least 30 minutes before grilling.
Make sure to leave a little space between each piece on the skewers for even cooking. Don’t overcrowd the skewers, as it may lead to undercooked shrimp or vegetables.
If using wooden skewers, make sure to oil them lightly before grilling to prevent sticking.
You can serve this dish with your favorite sides, such as rice, quinoa, or a fresh salad. For a more flavorful marinade, refrigerate the shrimp overnight instead of just 30 minutes.
This recipe is perfect for a quick dinner party or a summer barbecue.
