Instructions

Preheat the oven to 400°F (200°C).

Line a large baking sheet with aluminum foil or parchment paper, leaving enough room for the salmon fillets to fit comfortably.

In a small saucepan, combine pineapple juice, maple syrup, brown sugar, olive oil, soy sauce, rice vinegar, grated ginger, and garlic.

Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low and simmer for about 10 minutes, or until the glaze has thickened slightly.

Season the salmon fillets with salt and pepper to taste.

Place the salmon on the prepared baking sheet, leaving about 1 inch of space between each fillet.

Brush the maple glaze all over the salmon fillets, making sure they’re fully coated.
