Ready Time
45 mins
Yields
6 servings
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/2 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 corn tortillas
- 1 ripe mango, diced
- 1/2 red onion, diced
- 1 jalapeño pepper, seeded and finely chopped
- 1/4 cup cilantro leaves, chopped
- 2 limes, cut into wedges
- Salt and pepper, to taste
Instructions
Preheat your grill to medium-high heat. In a large bowl, whisk together olive oil, lime juice, cumin, smoked paprika, salt, and pepper.
Add the shrimp and marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.
Remove the shrimp from the marinade, letting any excess liquid drip off. Grill the shrimp for 2-3 minutes per side, or until they’re pink and cooked through.
While the shrimp are grilling, prepare the mango salsa.
In a medium bowl, combine the diced mango, red onion, jalapeño pepper, and chopped cilantro. Squeeze a sliver of lime juice over the top and season with salt and pepper to taste.
Warm the corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
Assemble the tacos by placing a few grilled shrimp onto a tortilla, followed by a spoonful of the mango salsa. Serve immediately, with lime wedges on the side.
Notes
For best flavor, use fresh and ripe mango for the salsa. Don’t over-marinate the shrimp, 15-30 minutes is plenty of time.
If you prefer a spicier salsa, add more jalapeño or use hot sauce to taste.
You can also prep the mango salsa ahead of time and store it in the refrigerator for up to a day. To prevent shrimp from sticking to the grill, make sure it’s clean and brush it with olive oil before grilling.
For extra flavor, sprinkle a pinch of smoked paprika on the shrimp before grilling.
You can also serve with your favorite toppings like diced avocado, sour cream, or shredded lettuce.
