  • 6 corn tortillas
  • 1 ripe mango, diced

  • 2 limes, cut into wedges
  • Salt and pepper, to taste

Instructions

Preheat your grill to medium-high heat. In a large bowl, whisk together olive oil, lime juice, cumin, smoked paprika, salt, and pepper.

Add the shrimp and marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.

Remove the shrimp from the marinade, letting any excess liquid drip off. Grill the shrimp for 2-3 minutes per side, or until they’re pink and cooked through.

While the shrimp are grilling, prepare the mango salsa.

In a medium bowl, combine the diced mango, red onion, jalapeño pepper, and chopped cilantro. Squeeze a sliver of lime juice over the top and season with salt and pepper to taste.

Warm the corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
