Ingredients
- Italian sausage (4.5 pounds), sweet onions (3 large), bell peppers (6 large, any color), garlic (12-15 cloves), olive oil (1/4 cup), salt (2 teaspoons), black pepper (1 teaspoon), dried oregano (1 teaspoon), dried basil (1/2 teaspoon)
Instructions
Preheat your grill to medium-high heat.
Slice the Italian sausage into 1-inch thick rounds and place them on a large plate or tray.
Drizzle 2 tablespoons of olive oil over the sausage and sprinkle with salt, black pepper, dried oregano, and dried basil.
Toss the sausage slices to coat evenly with the oil and spices.
In a large bowl, slice the sweet onions and bell peppers into 1-inch thick slices.
Add the remaining 2 tablespoons of olive oil, minced garlic, salt, and black pepper to the bowl.
Toss the vegetables to coat them evenly with the oil and spices.
Grill the Italian sausage slices for 5-7 minutes per side, or until they’re nicely charred and cooked through.
Transfer the cooked sausage to a large serving platter or individual plates.
Grill the sliced onions and bell peppers for 5-7 minutes per side, or until they’re tender and lightly charred.
Add them to the serving platter or individual plates along with the grilled sausage.
Serve hot and adjust the seasoning as needed.
Notes
Make sure you have a good quality Italian sausage for the best flavor and texture.
You can use any color bell peppers you like, but a mix of colors adds a nice visual appeal to the dish.
If you’re worried about the garlic overwhelming the dish, you can reduce the amount to 8-10 cloves.
Don’t overcrowd the grill, cook the sausage and vegetables in batches if necessary, to ensure they cook evenly.
You can also use a grill pan on the stovetop if you don’t have an outdoor grill.
To make this recipe more substantial, serve with crusty bread, over rice, or with roasted potatoes.
