Ingredients

  • -2 cups light brown sugar
  • -2 cups white sugar
  • -2 teaspoons vanilla extract
  • -2 cups vegetable oil
  • -4 eggs
  • -4 cups all-purpose flour
  • -2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 ½ cups quick cooking oats
  • 4 cups cornflakes cereal
  • cup chopped pecans (optional)
  • cup flaked coconut (optional)

Instructions

1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).

2. In a large bowl, cream brown sugar, white sugar, vanilla extract, vegetable oil and eggs together until smooth.

3. Add all-purpose flour, baking soda and salt to the mixture and mix well again.

4. Stir in quick cooking oats, corn flakes cereal, chopped pecans (optional) and flaked coconut (optional).

5. Drop dough by rounded tablespoonfuls onto an ungreased cookie sheet.

6. Bake in preheated oven for 8 to 10 minutes until lightly golden brown around the edges.

7. Enjoy! Makes 10 dozen (2 inch) cookies in total – caution: halve recipe if you don’t want this many!
