Orange Lunch Box Cookies

Ingredients

  • -1 cup butter, softened
  • -1 cup packed brown sugar
  • -1 egg
  • -1 tablespoon orange zest
  • -1 teaspoon vanilla extract
  • -2 cups all-purpose flour, sifted
  • -3 teaspoons baking powder
  • -½ teaspoon salt
  • -½ cup chopped walnuts or pecans (optional)

Instructions

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg, orange zest, and vanilla extract until well combined.

3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients, mixing until just blended. If desired, stir in the chopped walnuts or pecans at this point.

4. Chill dough for 30 minutes or longer if time allows (this will help prevent spreading during baking).

5. To make the sugar topping: mix together granulated sugar and nuts of choice in a small bowl; set aside

6 . Roll dough into small balls about 1-inch in diameter*. Place on a greased cookie sheet; flatten each ball slightly with your fingers or the bottom of a glass dipped in sugar/nut mixture**
