Combine 2 cups of heavy cream, 1 cup of whole milk, 1/2 cup of granulated sugar, and a pinch of kosher salt in a medium saucepan.
Whisk the mixture over medium heat until the sugar has dissolved and the mixture is hot but not boiling.
Remove the mixture from the heat and let it cool to room temperature.
Cover the mixture and refrigerate it for at least 2 hours or overnight.
Once the mixture is chilled, stir in 2 tablespoons of freshly squeezed lemon juice, 1 teaspoon of grated lemon zest, and 1/2 teaspoon of vanilla extract.
