Yields
10 servings
Ingredients
- 2 cups rolled oats
- 3/4 cup creamy peanut butter
- 1/2 cup confectioners’ sugar
- 1/4 cup graham cracker crumbs
- 1/4 cup chopped peanuts
- 1/4 cup chocolate chips
- 1/4 teaspoon salt
- 1 tablespoon honey
- 1 tablespoon light corn syrup
Instructions
Line a baking sheet with parchment paper or a silicone mat. In a large bowl, whisk together the oats, peanut butter, confectioners’ sugar, and salt until well combined.
Stir in the graham cracker crumbs, chopped peanuts, and chocolate chips until a dough forms.
In a small bowl, whisk together the honey and light corn syrup until smooth. Add the honey-corn syrup mixture to the dough and stir until everything comes together in a sticky ball.
Use your hands to shape the dough into small clusters, about 1 inch in diameter.
You should end up with around 10 clusters. Place the clusters on the prepared baking sheet, leaving a little space between each one to allow for spreading.
Refrigerate the clusters for at least 30 minutes to set.
Once set, store the Chow Clusters in an airtight container in the refrigerator for up to 5 days.
Notes
Here are the Make sure to use creamy peanut butter for the best flavor and texture.
If using natural peanut butter, stir it well before measuring to incorporate the oil.
If the dough is too sticky, refrigerate it for 10-15 minutes to firm it up before shaping into clusters.
To ensure the clusters hold their shape, chill them for at least 30 minutes before storing.
For a crunchier cluster, use chopped peanuts instead of peanut butter chips.
You can customize the clusters by adding different mix-ins, such as chopped dried cranberries or shredded coconut.
If you find the clusters too sweet, reduce the confectioners’ sugar to 1/3 cup or even less, depending on your taste preference.
Chow Clusters make great snacks or treats for school lunches, picnics, or outdoor adventures!
