Instructions

Cook the ground beef in a large skillet over medium-high heat, breaking it up with a spoon as it cooks, until it’s fully browned, about 5-7 minutes.

Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.

Stir in the packet of taco seasoning and cook for 1-2 minutes, until the flavors are combined.

Season with salt and pepper to taste.

In a large bowl, combine the shredded cheddar cheese and Monterey Jack cheese.

In a large skillet, warm the tortillas over medium heat for about 30 seconds on each side.

This will make them more pliable and easier to fold.

To assemble the quesadillas, lay a tortilla in the skillet and sprinkle a quarter of the cheese mixture onto half of the tortilla.

Top with a slice of American cheese, a spoonful of the beef mixture, and a sprinkle of cilantro and scallions.

Fold the tortilla in half to enclose the filling.

Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.

Flip and cook the other side.

Repeat with the remaining ingredients to make 5 more quesadillas.

Cut the quesadillas into wedges and serve with sour cream and salsa for dipping.

Notes

Use 80/20 or 70/30 ground beef for the best flavor. You can also use leftover taco meat if you have some on hand.

Don’t overcook the ground beef, as it can make the quesadillas dry.

If you like a little heat, add some diced jalapenos or sliced hot peppers to the beef mixture. You can customize the quesadillas to your taste by adding diced tomatoes, diced avocado, or sliced black olives to the filling.
