  • 6 slices of bacon, cooked and crumbled

Instructions

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

In a medium bowl, whisk together flour, sugar, baking powder, and salt.

In a large bowl, using an electric mixer, beat the butter until it’s creamy, about 2 minutes.

Add the egg one at a time, beating well after each addition.

Beat in the vanilla extract and maple syrup until well combined.

With the mixer on low speed, gradually add the flour mixture to the wet ingredients in three parts, alternating with the buttermilk, beginning and ending with the flour mixture.

Beat just until combined.

Fold in the crumbled bacon.

Divide the batter evenly among the muffin cups.

Bake for 20-22 minutes or until a toothpick inserted in the center of a cupcake comes out clean.

Let the cupcakes cool completely in the pan.

Dust the top of each cupcake with confectioners’ sugar before serving.
